The character of Brut.
Nose
The bouquet opens with citron and lemon, followed by green apple and white flowers. Extended lees ageing brings elegant notes of fresh bread crust, delicate pastry and fresh almond. Mineral accents and a saline edge, characteristic of the Dolomite soils, complete a focused, linear profile.
Palate
Taut and vibrant on entry, with fine, natural acidity. The palate is balanced and poised, combining a slender yet assured structure with a mineral drive that lengthens the finish. The bubbles are creamy and seamlessly integrated, lifting the purity of the fruit without overpowering it. Long and clean on the finish, with citrus returning alongside a saline lift that invites another sip.

Elevium Brut 2021 is a vintage Trento DOC Blanc de Blancs made from selected Chardonnay grapes, harvested by hand in our finest hillside vineyards and trained using the traditional Trentino pergola system.
Winemaking begins with gentle pressing, followed by fermentation of the must in stainless-steel tanks. Secondary fermentation takes place in the bottle according to the traditional method, followed by more than 36 months of ageing on the lees.
