Selection
Harvest
The grapes are selected and picked by hand to preserve freshness and acidity: the essential starting point for a fine, balanced traditional-method sparkling wine.
The traditional method
In the traditional method, secondary fermentation takes place in the bottle. This is where the bubbles form naturally and the base wine becomes Trento DOC, Trentino’s traditional-method sparkling wine.
From vine to glass
The traditional method is the process in which the perlage develops through a second fermentation directly in the bottle. For Elevium, it is a precise sequence — from harvest to disgorgement — where each stage prepares the next and time cannot be hurried.
Selection

Purity
Gentle pressing yields the purest must. The first fermentation in stainless steel creates a still base wine defined by freshness, clarity and precision, ready for its second fermentation in bottle.
The beginning
The liqueur de tirage, a blend of yeast and sugar, is added to the base wine. The bottle is sealed and secondary fermentation begins: the heart of the traditional method.
Time
Secondary fermentation naturally creates carbon dioxide and therefore the perlage. During extended lees ageing — at least 36 months for Brut and Rosé, and at least 48 for Nature — the wine develops finesse, complexity and mature nuances.
Precision
The bottles are gradually turned and tilted, guiding the sediment towards the neck.
Completion
The sediment is expelled during disgorgement. Dosage is then defined, the bottle receives its final cork and the Trento DOC rests until balance and harmony return.
Elevium Trento DOC
This is how time becomes perlage: fine, persistent bubbles, aromatic complexity and the precision of a mountain-born traditional-method sparkling wine.
